Booth St Bistro is owned and operated by husband and wife team Wayne and Teresa Borgese-Coom
Wayne is a formally trained chef with over 18 years experience. He commenced his apprenticeship in New Zealand, working his way through some of New Zealands best restaurants, including:
Cin Cin on Quay (one of New Zealands premium waterfront dining restaurant serving modern european cuisine);
GPK (voted best woodfired pizza in Auckland);
Orbit Restaurant (Aucklands most famous landmark on top of the Sky Tower); and
Warakie Resort.
In 2000 Wayne moved to Sydney and worked in Bayswater Brasserie before moving onto Level 41. Wayne then headed the kitchen at Specc in Clovelly for 3 years. In 2008 Wayne headed to the Beijing Olympics where he cooked for NBC, and then worked at World Square upon his return. Wayne has been searching for the right location to open his own restaurant, and found the ideal space in Annandale, in a building with charm and character.
Teresa is a qualified chef who has worked in the Hospitality Industry for over 17 years. Teresa worked at Pinetrees Lodge on Lord Howe Island for 6 months before returning to Sydney to be part of the pre opening team at the Holiday Inn Coogee Beach, Sydney where she stayed for 4 years. Teresa was then part of the team that was selected by The General Manager Mr Tony Shepherd on his appointment as General Manager on Hamilton Island in Queensland to work for him as part of his team on the Island. Teresa was also the owner/operator of a successful Cafe at The Community Hospital in Hurstville for 6 years.
