Chef Chris Coolahan leads the team at the republic combining Mediterranean flavours with Australian seasonal fare. He aspires to bring simple modern bistro food to the business district of Sydney.
At 30, he brings a wealth of experience to the Republic. Beginning his career in Newcastle and the Hunter Valley, he then moved to London to Chef in the kitchens of Mirabelle and Daphnes.
Since moving back to Sydney, he has served as Sous Chef at MG Garage, before taking the Executive Chef position at republic. In his time he has taken the dinning at Republic to new heights.
