Restaurant Sanctuary offers an intimate dining experience in an opulent setting with exquisite food and warm, friendly service.

Set against the backdrop of the Brokenback Mountains, the restaurant is nestled amongst the magnificent gardens of Peppers. The new interior boasts a contemporary and refined, warm and relaxed atmosphere with a touch of art nouveau romance. The menu, reflecting the change of seasons, is beautifully handcrafted by Executive Chef Michael Bolam and his talented crew.

Last year, Michael Bolam returned to Peppers Guesthouse as Executive Chef. After completing his apprenticeship at Peppers some years ago, Michaels passion for food took him away from the Hunter on a mission to further hone his skills, from Sydney then on to Europe, where he worked in France and then London where he was part of the team for over 12 months at the two Michelin Star Restaurant, The Ledbury.

The wine list exemplifies the very best of the Hunter Valley including iconic wines from traditional producers such as Brokenwood and Tyrrells and new generation winemakers
De Iuliis and Meerea Park. Whilst also covering the boutique spectrum of the Hunter, the list features wines from around the world to tempt the more adventurous palate.

Restaurant Sanctuary is all about fine dining. The service staff are an enthusiastic team who are trained to be knowledgeable, accommodating and discreet. Restaurant Sanctuary is destined to become one of the Hunters finest dining experiences.
